Start with the freshest roasted coffee. We can deliver our coffee to you within 24 hours of roasting. Coffee is best in the first few weeks following roasting.

Use the proper amount of coffee – if too little coffee is used, it becomes over-extracted and bitter. Start with one tablespoon of coffee per cup of water and adjust to taste.

Grinding – buy whole bean coffee and grind just before brewing for the best flavor. Pre-ground coffee tends to oxidize and lose flavor quickly. Also, do not over grind as this can lead to over-extraction and a bitter cup of coffee.

Quality water – Because coffee is 98% water, water quality is of utmost importance. If your water tastes unpleasant, it will be reflected in your coffee, so use filtered or bottled water. Ideal water temperature is about 200 degrees – your coffee maker will heat to a preset temperature, but water temperature control is important when using a French press.

Storage – Store your coffee in an airtight container out of direct light and away from heat. Avoid areas where the beans may absorb other odors, flavors, or moisture such as would happen in a refrigerator. You may store your coffee in the freezer, but take out only as much as you will use each day and reseal your storage container well.

Brewing – Keep your coffee maker clean. Use a gold plated metal filter for best results. If paper filters are used, oxygen cleansed paper filters will avoid imparting undesirable flavors to your coffee. If your coffee is not consumed immediately after brewing, it is best to store it in a thermal carafe to maintain its freshness and flavor. If the coffee is left on a heating pad, it will become burned and bitter.
